Buckwheat bread

You will need only two main ingredients to make this piece-of-heaven bread. Buckwheat and water. I have been baking my own bread for several years now and this is the recipe that is the most easy and the most delicious (at least for me). Buckwheat is an energizing and nutritious grain with a specific flavour that is just amazing for making a divine and healthy bread.

 

Ingredients:

– sourdough (starter)

– 400g buckwheat flour

– 100ml-200ml water

– coconut oil for greasing the baking pan

(salt, cumin, flax seeds, poppy seeds, sunflower seeds, sesame, dried herbs…)

 

Method:

1. In a big bowl mix the sourdough starter with buckwheat flour and water. You want to get a thick mixture that is still “just runny”. The amount of water depends on the type of flour you are using (wholemeal or plain buckwheat flour)

2. Take about 3 table spoons of this mixture and put it in the small container, close with the lid and store it in a fridge. This will serve as a starter next time you are baking this bread.

(3.) Now, you can customize the brad by adding salt, seeds, dried herbs or fried onion if you would like to. Altering the basic recipe comes handy when baking a bread regularly.

4. Pour the bread mixture into the greased baking pan. Leave the bread to set over the night (or for 6-12 hours), covered with the kitchen cloth.

5. Preheat the oven to 185°C and bake the bread for 40-45 minutes. Before you put the brad into the oven you can put a teaspoon of a coconut oil on the top of the bread.
