Lemon chicken

The result of this simple recipe is delicious tender chicken meat with beautiful fresh flavours of herbs and lemon. I served this chicken with potatoes gratin but you can serve with anything you like. Do not forget to make a big bowl of salad as well :)

Ingredients: (serves 2-4)

– 1 organic, free range chicken (1,4 kg)
– 3-4 tbs olive oil
– 1 big organic lemon
– salt
– grounded black pepper
– thyme
– 1/2 tsp of turmeric for nice yellow colour (optional)

Method:

1. Preheat the oven to 225°C. Wash lemon with warm water and prick it with fork several times.
2. Salt the inside of the chicken and insert branch of thyme and lemon.
3. In a small bowl combine 2-3 spoons of olive oil, salt, pepper, thyme (and turmeric if you would like to). Using kitchen brush, cover the chicken with this mixture.
4. Grease the pan with one spoon of olive oil. Place the chicken (lying on a side) into the pan. Bake for 20 minutes.
5. Turn the chicken on the other side and bake for another 20 minutes.

You can pour the juice and oils from the bottom of the pan over the chicken, it will create an amazing crispy skin. 

6. Turn the chicken so it lies on its back (breasts up) and bake for 20-25 minutes.
7. You can see whether chicken is done by inserting the testing stick into the chicken leg – if the juice that comes out is clear the chicken is done, if it’s pink you have to bake it for a bit longer.
