Millas (or Mia)

This recipe for very simple cake called Millas or Mia comes from south west of France. It is a sort of custard dessert cake made with corn flour, it is full of delicious flavours and you can alter it by adding some fruit if you wish. It is perfect for breakfast with some nice herb tea or black coffee.

I found the amount of sugar in the original recipe a bit too much as it equals to the amount of flour used – so if you prefer not so sweet desserts I recommend you to use less sugar.

Ingredients:

– 120g organic corn flour
– 120g unrefined cane sugar (feel free to use less sugar)
– 3 big organic eggs
– 1/2 liter of milk
– 1tbs olive oil
– lemon zest (from one, organic lemon)
– pinch of salt
– butter for greasing the tin
(you can also use vanilla or almond essence, or half of vanilla bean seeds to flavour the cake)

Method:

1. In a big bowl, combine flour, sugar, salt, eggs and olive oil.
2. While stirring, gradually pour milk in the mixture.
3. Add lemon zest (and essence if you prefer)
4. Pour runny mixture into the greased form and let sit for 20 minutes – corn flour will sink to the botton of the tin and create a nice base for the cake.
5. Bake in a preheatet oven on 210°C for 30-40 minutes or until the top of the cake has golden-brown colour.
