Creamy pea soup

Green peas are delicious legumes full of proteins and vitamines (A, C, B1, B2, B5). Also, they are rich in iron, magnesium and zinc. B vitamines boost the immunity system and strenghten our heart and bloodstream. High values of iron and folic acid in green peas are the reason why eating them is a big help when fighting anemy.  As green peas are high in fiber and vitamine C they are amazing antioxidants.

Ingredients: (serves 2)

– 2-3 middle sized onions
– 30g organic butter (or coconut oil for vegan version)
– 300g fresh or frozen green peas
– 0,5l water
– salt, black pepper, chilli flakes, thyme or any herbs

Method:

1. Chop the onions and then fry them using organic butter or coconut oil. Do this slowly over a low heat – it makes the onions much more sweet. 2. Add peas to the pot. Then add salt and pepper. You can add chilli or herbs if you would like to.
3. Pour half a liter of boiling water into the pot.
4. Mix the soup until creamy (using food processor). If the mixture is too thick, add some more water.

This warming soup has distinctive, rather sweet flavour. This version of pea soup is beautifully creamy even though there is no cream or cheese in it. You can serve it with fresh herbs or onion on the top.
