Christmas Cider Cake

Cider is a beverage made out of  fermented apple juice. Even though it contains alcohol it might be also good for you (when drink in an appropriate measure) as it is, similarly to red wine, full of antioxidants that help your body fighting free radicals. Moreover, bubbles make the cake beautifly fluffy and apple cider with cinnamon and nuts create perfect Christmas atmosphere :)

Ingredients:

– 100g butter (at room temperature)
– 130g organic cane sugar or honey
– 2 big organic eggs
– 1/2 teaspoon of organic vanilla extract
– 100g grounded almonds/ almond flour
– 50g grounded walnuts
– 1 teaspoon of baking soda
– 1/4 teaspoon of sea salt
– 2 teaspoons of grounded cinnamon
– 200ml Apple cider ( I have used Slovak Cider Opre’, it is organic and it tastes divine)

Method:

1. Preheat oven to 180°C and grease a cake form with butter.
2. Cream the butter until smooth. Add sugar (or honey) and beat until fluffy.Add eggs, cider and vanilla extract. Don’t worry if the batter looks a little uneven.
3. Add all dry ingredients and bake for 20-30 minutes or until a cake tester inserted into the center comes out clean.
4. You can decorate the cake using your imagination – I have used walnuts and apples caramelised with honey. Apples and cider create wonderful and harmonic taste.
