Almond cake

Im writing this recipe couple of hours after I launched Mangofique. Ive got many beautiful messeges full of lovely words. Therefore Ive decided to celebrate by baking one of the yummiest cake I know. It is a Swedish recipe that is originally called Zuleikatårta.



– 3 egg whites
– 100g grounded almonds (almond flour)
– 80g cane sugar (or other non-refined sugar)
– a tiny bit of salr


– 3 yolks
– 60g organic cane sugar (or other non-refined sugar)
– 2dcl organic double cream
– 50g organic butter at the room temperature
– 25g almond flakes


1. Preheat the oven to 175°C. Grease the form with butter.
2. Whisk the egg whites with a bit of salt and cane sugar.
3. Gently combine the whisked egg whites with grounded almonds and transfer the mixture into the greased form. Try to make it look smooth using the spatula.
4. Bake in the lower part of the oven for 20 minutes or until the base is nice and golden.

5. Prepare a double boiler. Place a heat-resistant bowl into the pot with hot water.
6. In the bowl combine yolks double cream, butter and sugar. Boil in double boiler until the mixture gets thicker.
7. Roast almond flakes until golden-brown.
8. When the icing is thick and ready, let it come to the room temperature and pour it over the base. Sprinke roasted almond flakes on the icing. Let cool completely in the fridge.
